I was looking for some paleo butternut squash recipes and decided to ask for help. i love butternut squash. love, love, love it. so i recently asked my facebook community how they like to prepare butternut squash, and i heard so many great ideas! just wanted to share some of them with you, along with several other ideas i’ve found in the meantime.. Mashed butternut squash makes a simple breakfast porridge topped with fruit and coconut milk. i like to mix in a big spoonful of coconut butter (that’s an amazon link ), which lends a thicker and creamier texture.. This roasted butternut squash is so simple to prepare, it feels like cheating because it is so tasty due to the slightly crispy outside and mushy inside. mashed cauliflower is the standard paleo mashed potato substitute. (which is why i scaled the recipe for this, plus my normal butternut squashes that i buy from my local farmer’s.
